After meticulous control and when the grapes reach maturity, the best vines are selected. Then, at the optimum moment, mid-October, the grapes are harvested in the best of conditions for the subsequent production of the wine.
Fermentation takes place at a controlled temperature of 22-25°C, for approximately two weeks followed by a week of maceration. After, the wine is aged for 12 months in 300 litre French oak barrels.
